David Scott Peters, Restaurant Systems Expert

David Scott Peters

David Scott Peters founded Smile Button Enterprises, LLC in 2003 to train and inspire restaurant owners and managers on the appropriate skill sets and “SMART Systems” they need to realize their dreams in the competitive restaurant business. SMART Systems — Simple, Measurable, Applicable, Repeatable and Trainable — is a term Peters coined, having refined dozens of systems over the years, devoting his professional life to the specialized issues facing franchise owners.

At the same time, Peters understands the needs of the independent restaurant owner. He grew up in his family’s successful restaurant and catering business in Linwood, N.J. Today, through Smile Button Enterprises, Peters teaches independent restaurant professionals the same business practices that make franchise operations so strong — staff training, solid financial controls and SMART systems. He does this through development of restaurant operations training materials delivered in various formats, including print, online, audio, motivational workshops and coaching sessions. Also critical to the success of his clients is Peters’ relationships with restaurant industry professionals, vendors and manufactures who share his vision to train and inspire.

Peters’ expertise and experience was gained through several years of working in restaurant and franchise operations. Most recently he served at the executive level for Famous Sam’s, Inc., a restaurant/sports bar chain with system-wide annual revenues in excess of $30 million. As chief operating officer (COO), he was credited with skillfully managing the turnaround for the chain, taking it from near-bankruptcy and turning it into a thriving enterprise, ultimately resulting in the company’s profitable sale. His development of accelerated training programs for new franchise owners significantly improved first-year operations for each new Famous Sam’s location. In his time with Famous Sam’s, Peters also served as an independent consultant to the franchise’s corporate office and to individual franchise units, providing operational support, financial analysis and management training.

Peters has also been an academics instructor for the Scottsdale Culinary Institute in Arizona. There, he upgraded the curriculum and introduced projects which improved management practices in the industry.

Peters also earned multiple promotions while at Coyote Springs Brewing Company & Café in Phoenix. As director of operations, Peters oversaw daily operations of two locations with combined annual sales of $3.5 million, as well as 10 managers and more than 110 line-employees. While at Coyote Springs, Peters upgraded human resources, which included the development of hiring systems and standards. Also, he led the first team-development and team-supported business plans and Management by Objectives (MBOs) in the company’s history.

Prior to Coyote Springs, Peters served as director of franchise development for Service Center, Inc., a company that provided marketing and dispatch services to independent contractors. There, he contributed to the Scottsdale-based company’s first-year growth of 800 percent through the sale of new and existing franchise businesses.

Peters earned a Bachelor of Science degree in speech communications, interpersonal/organizational from Northeastern University in 1989. He resides in Peoria, Arizona, with his wife Susan and their two children.
